A light, creamy no-bake cheesecake that’s simple to prepare and perfect for any occasion.

Ingredients

For the Crust

  • 140 g biscuits or cookies of your choice (graham crackers, digestive biscuits, or whole-grain biscuits)
  • 30–40 g butter (or coconut oil or peanut butter)

For the Filling

  • 780 g cottage cheese, quark, or ricotta
  • 2 packets unflavored gelatin
  • 1 heaping tablespoon honey
  • 36 g sugar-free fruit spread or jam (blueberry was used in the original recipe)
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • A little lemon juice (optional)
  • Stevia or another sweetener to taste (optional)

For the Topping

  • A few spoonfuls of sugar-free fruit spread or jam (blueberry recommended)

Instructions

Prepare the Crust

  1. Crush the biscuits into fine crumbs using a food processor or by placing them in a zip-top bag and crushing them with a rolling pin.
  2. Mix the crumbs with the melted butter until evenly combined.
  3. Press the mixture firmly into the bottom of a cake pan (preferably up to 20 cm / 8 inches in diameter).
  4. Refrigerate while preparing the filling.

Prepare the Filling

  1. In a large bowl, combine:
    • Cottage cheese (or ricotta/quark)
    • Vanilla extract
    • Honey
    • Lemon zest
    • A little lemon juice (optional)
    • Stevia (if using)
  2. Mix until smooth and creamy.

Prepare the Gelatine

  1. Prepare the gelatin according to the package instructions.
  2. Let it bloom in cold water for about 10 minutes.
  3. Dissolve it over a double boiler or gently heat until completely melted.
  4. Allow it to cool slightly (do not let it set), then slowly whisk it into the cheesecake mixture.

Assemble

  1. Pour the filling over the chilled crust.
  2. Smooth the top with a spatula.
  3. Spoon the sugar-free blueberry spread (or your favorite fruit spread) over the top.
  4. Swirl gently if desired.

Chill

Refrigerate for:

  • At least 2 hours before serving.
  • Overnight for the best texture and easier slicing.

Servings

Cut into 8 equal slices.

Notes

  • Whole-grain biscuits make a healthier crust.
  • Ricotta gives a lighter texture, while quark or cottage cheese creates a higher-protein cheesecake.
  • Fresh berries make an excellent garnish.
  • Store covered in the refrigerator for up to 4 days.
